Chinese Chicken Salad Recipe
The Chinese Chicken Salad combines crisp lettuce, shredded chicken, red cabbage, red pepper, scallions, mandarin oranges, and crunchy chow mein noodles for a refreshing textural mix. A dressing of garlic, ginger, brown sugar, sesame oil, soy sauce, vinegar, and canola oil enhances the salad with a balance of sweet, savory, and tangy flavors. It's a vibrant salad with contrasting crunch and tender protein.
Ingredients
for the salad -
- 5 oz. lettuce pre-washed
- 1/4 head red cabbage shredded
- 1/2 lb. chicken cooked and shredded
- 1 red pepper diced
- 4 scallions sliced
- 1 can mandarin orange drained
- 1/2 cup Chow Mein noodles
for the dressing -
- 2 teaspoons garlic minced
- 2 teaspoons ginger grated
- 2 1/2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons white vinegar
- 3 tablespoons canola oil
Instructions
- Place all salad ingredients into a bowl. Set aside.
- In a small bowl, whisk together all ingredients for the dressing. Toss salad with dressing and serve immediately.
- Feel free to adapt the ingredients in the dressing to suit your tastebuds. For instance, if you have ginger, reduce the amount you use. If you like sweet dressings, add more brown sugar. Do you see where I'm going with this?
