Ingredients
for the salad -
- 5 oz. pre-washed lettuce
- 1/4 head red cabbage shredded
- 1/2 lb. chicken cooked and shredded
- 1 red pepper diced
- 4 scallions sliced
- 1 can mandarin oranges drained
- 1/2 cup Chow Mein noodles
for the dressing -
- 2 teaspoons minced garlic
- 2 teaspoons grated ginger
- 2 1/2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons white vinegar
- 3 tablespoons canola oil
Instructions
- Place all salad ingredients into a bowl. Set aside.
- In a small bowl, whisk together all ingredients for the dressing. Toss salad with dressing and serve immediately.
- Feel free to adapt the ingredients in the dressing to suit your tastebuds. For instance, if you have ginger, reduce the amount you use. If you like sweet dressings, add more brown sugar. Do you see where I'm going with this?
