Chinese Red Spinach Amaranth Stir Fry
Chinese Red Spinach Amaranth Stir Fry features tender red amaranth greens cooked with fragrant golden garlic in vegetable oil. The vegetable is gently simmered with water under a lid to soften, then seasoned with salt. This quick cooking method keeps the greens soft yet vibrant, pairing the mild earthiness of Yin Choy with the aromatic garlic flavor.
Ingredients
- 1.5 pounds red spinach amaranth Chinese, Yin Choy
- 6 cloves garlic
- 1 tablespoon vegetable oil
- 4 cups water
- ¼ teaspoon salt (Add salt to your taste)
Instructions
- Peel and wash 6 cloves of garlic. Then, pour 1 tablespoon of vegetable oil into a pot. Put the garlic and stir fry until it turns golden brown.
- After that, put the washed yin choy red Chinese spinach into the pot. Pour 4 cups of water. Then, cover the lid for 2-3 minutes.
- Next, open the lid and flip the yin choy on the other side and cover another 2-3 minutes. Or until it’s soft. Then, add ¼ teaspoon of salt and stir it well. (Remember to add salt to your taste.)
Notes
- Remove roots and tough or old stems from Yin Choy to ensure tender leaves and clean cooking.
- Soak Yin Choy in water for 15 minutes and rinse 2-3 times to thoroughly wash away dirt and grit.
- Cook the greens with a lid and some water to keep them soft and lightly sauced, adjusting salt to taste at the end.
