Description

This recipe begins by stir frying peeled garlic cloves in vegetable oil until golden brown, developing a rich aroma. Washed red spinach amaranth (Yin Choy) is then added, and water is poured in before covering with a lid to steam the greens gently for several minutes. Flipping the greens midway ensures even cooking until tender. Finally, salt is added to season to taste, blending with the natural sweetness and mild flavor of the amaranth.

The resulting dish features soft, wilted greens with a subtle infusion of garlic, enhanced by the light broth formed during steaming. It is a straightforward, healthy vegetable side that complements richer main dishes.

  • 1.5 pounds red spinach amaranth Chinese, Yin Choy
  • 6 cloves garlic
  • 1 tablespoon vegetable oil
  • 4 cups water
  • ¼ teaspoon salt (Add salt to your taste)

Instructions

  1. Peel and wash 6 cloves of garlic. Then, pour 1 tablespoon of vegetable oil into a pot. Put the garlic and stir fry until it turns golden brown.
  2. After that, put the washed yin choy red Chinese spinach into the pot. Pour 4 cups of water. Then, cover the lid for 2-3 minutes.
  3. Next, open the lid and flip the yin choy on the other side and cover another 2-3 minutes. Or until it’s soft. Then, add ¼ teaspoon of salt and stir it well. (Remember to add salt to your taste.)

Notes

  • Remove roots and tough or old stems from Yin Choy to ensure tender leaves and clean cooking.
  • Soak Yin Choy in water for 15 minutes and rinse 2-3 times to thoroughly wash away dirt and grit.
  • Cook the greens with a lid and some water to keep them soft and lightly sauced, adjusting salt to taste at the end.
