Chinese Salt & Pepper Pork

Ingredients

Pork:
  • 1 lb pork butt cut into bite sized pieces, 豬肉
  • 1 tablespoon soy sauce 醬油
  • ¼ teaspoon white pepper 胡椒粉
  • 1 large egg beaten, 蛋
  • ½ C all-purpose flour ¾ cup, (麵粉
For frying:
  • 4 C peanut oil 花生油
Aromatics & seasonings:
  • 2 tablespoon onion diced, white, 洋蔥
  • 1 teaspoon garlic minced, aka 蒜
  • ¼ red bell pepper diced, 紅甜椒
  • ¼ green bell pepper 青椒
  • ½ teaspoon sea salt 鹽
  • ½ teaspoon white pepper 胡椒粉

Instructions

Prepare the pork:

  1. In a bowl, combine pork chunks with soy sauce and white pepper.
  2. Stir to combine and place into the fridge to marinate for at least 1 hour.
  3. Add 1 beaten egg to the pork and mix ½ C to ¾ C of all-purpose flour to coat the pork pieces.
Fry the pork:
  1. Heat up a wok or large pot with peanut oil over medium high heat.
  2. Once the oil temperature reaches 350°F/177°C, add in the pork pieces and fry in batches, until crispy and golden brown, about 6-7 minutes.
  3. Remove the fried pork and place onto a baking sheet lined with paper towel.
  4. Repeat with the remaining pork.
Fry the aromatics:
  1. Drain and remove excess oil from the wok, leaving approximately 1 tablespoon of oil.
  2. Heat the wok over medium heat and add in the onion.
  3. Sauté, stirring the mixture constantly, for about 1-2 minutes.
  4. Transfer the fried pork into the wok and add in the garlic, red and green bell peppers, chili (if using), salt and pepper and continue to toss to combine.
  5. Remove from heat and transfer to a serving dish.
  6. Serve immediately with steamed rice.
