Chinese Salt & Pepper Pork

Chinese Salt & Pepper Pork features bite-sized pieces of marinated pork butt coated in flour and fried until golden and crispy. Tossed with sautéed onions, garlic, and colorful diced bell peppers, this dish brings together a satisfying mix of textures and a balanced seasoning of white pepper and salt. The pork’s crispy exterior complement the tender inside, making it suitable for a flavorful main or shared appetizer.

Description

Chinese Salt & Pepper Pork is prepared by marinating pork butt pieces in soy sauce and white pepper before an egg and flour coating creates a crispy fried crust. The pork is cooked in hot peanut oil until golden and crunchy. Aromatics such as onions, garlic, and diced red and green bell peppers are sautéed and combined with the fried pork along with salt and white pepper for seasoning. This method yields pork with a crisp exterior and tender interior, and the added vegetables provide mild sweetness and aroma.

The dish balances savory, aromatic, and mildly spicy elements with a pleasing mix of textures from the crunchy coating and soft vegetables. It can be served as a main course alongside rice or noodles, or enjoyed as a shared appetizer for gatherings. The detailed frying and seasoning steps ensure the pork holds flavor and crispness without becoming oily.

To prepare well, it is important to allow the pork to marinate for at least an hour to develop flavor and to fry in batches to maintain oil temperature and crispness. After frying, excess oil is drained to keep the dish light. Stir frying the aromatics separately helps avoid burning and concentrates their flavor when combined back with the pork. This approach supports a well-balanced dish with clear textural contrasts and layered taste.
