Chipotle Black Beans (Copycat)
These Chipotle Black Beans add smoky, spicy flavors to canned beans cooked with onion, garlic, and a blend of spices including chipotle chili powder and cumin. The beans are simmered until thickened to create a rich, aromatic side dish or component for Mexican-style meals.
Ingredients
- 2 tablespoons rice bran oil vegetable oil is fine too
- 1 yellow onion chopped
- 3 garlic minced, cloves
- 29 ounces black beans drained and rinsed well, canned
- 2 cups water
- 1 bay leaf
- 1 teaspoon kosher salt
- 1 teaspoon chipotle chili powder
- 1 teaspoon cumin
- 1/2 teaspoon black pepper coarse
- 1/2 teaspoon oregano dried
- 2 tablespoons lemon juice
- 2 tablespoons lime juice
Instructions
- Add the oil to a large dutch oven on medium heat along with the onions and cook for 4-5 minutes stirring occasionally until translucent before adding in the garlic and cooking an additional 30 seconds.
- Add in the beans, water, bay leaf, salt, chili powder, cumin, black pepper and oregano and bring to a boil then reduce to a simmer and cook for 15 minutes until thickened.
- Remove the bay leaf, add in the lemon and lime juice and serve.
