Description
The recipe starts by sautéing chopped yellow onions in oil until translucent, then adding minced garlic briefly. Canned black beans are combined with water, bay leaf, chipotle chili powder, cumin, black pepper, oregano, and kosher salt. The mixture is brought to a boil and reduced to simmer until thickened, allowing flavors to meld and intensify.

Ingredients
- 2 tablespoons rice bran oil vegetable oil is fine too
- 1 yellow onion chopped
- 3 garlic minced, cloves
- 29 ounces black beans drained and rinsed well, canned
- 2 cups water
- 1 bay leaf
- 1 teaspoon kosher salt
- 1 teaspoon chipotle chili powder
- 1 teaspoon cumin
- 1/2 teaspoon black pepper coarse
- 1/2 teaspoon oregano dried
- 2 tablespoons lemon juice
- 2 tablespoons lime juice
Instructions
- Add the oil to a large dutch oven on medium heat along with the onions and cook for 4-5 minutes stirring occasionally until translucent before adding in the garlic and cooking an additional 30 seconds.
- Add in the beans, water, bay leaf, salt, chili powder, cumin, black pepper and oregano and bring to a boil then reduce to a simmer and cook for 15 minutes until thickened.
- Remove the bay leaf, add in the lemon and lime juice and serve.
