Chipotle Black Beans Copycat

Chipotle Black Beans are the perfect addition to a burrito bowl or a side for your taco night! Tender beans simmered in a spiced sauce with onions and garlic. If you love Chipotle and their famous burritos and bowls then you are in for a treat! My homemade black beans taste even better than the restaurant and now you can make a budget friendly version at home.

Ingredients

  • 1 tablespoon oil
  • 1 small onion (diced)
  • 6 cloves garlic (minced)
  • 1 bay leaf
  • ½ tablespoon cumin
  • 1 tablespoon chili powder
  • ½ teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 can black beans (approximately 2 cups)
  • 1 cup water
  • Juice of 1 lime
  • Juice of 1 lemon
Garnish (Optional)
  • cilantro (fresh chopped)
  • Lime wedges

Instructions

  1. Wash and drain the canned black beans.
  2. In a medium sized frying pan or pot, on medium heat add the oil and diced onion. Sauté for 1-2 minutes or until translucent.
  3. Add the minced garlic. Sauté until fragrant, 1-2 minutes.
  4. Add the bay leaf, cumin, chili powder, cayenne pepper, smoked paprika and salt. Sauté for 1-2 minutes or until fragrant
  5. Add the drained and rinsed beans and 1 cup of water. Bring to a simmer and let simmer for 10-15 minutes or until thickened.
  6. Add the lime juice and lemon juice. Stir and season to taste with additional salt as desired. Serve and enjoy!
