Chipotle Cilantro Lime Rice Copycat Recipe
Chipotle Cilantro Lime Rice features basmati rice cooked with olive oil and salt, then tossed with fresh cilantro, lime juice, and lime zest for a lively and fragrant side dish. The rice is cooked carefully to ensure it is fluffy and tender, with the citrus and herb combination brightening the flavor. Ingredients
- 2 cups basmati rice unrinsed
- 3 cups water
- 1/2 teaspoon salt
- 2 tablespoons olive oil divided
- 3 tablespoons cilantro finely chopped
- 2 tablespoons lime juice fresh
- 1 tablespoon lime zest
Garnish:
- cilantro chopped
Instructions
- In a small heavy pot, add rice, water, 1 tablespoon oil and salt.
- Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce heat to low and cover with a lid for about 15 minutes.
- Turn off heat and let the rice sit COVERED with the lid on for an additional 5-10 minutes. Do NOT uncover immediately, as the rice is still cooking.
- In a medium bowl, combine chopped cilantro, lime juice, lime zest, rice and remaining 1 tablespoon of oil and toss until completely mixed.
- Serve as is or topped with cilantro and Chipotle Black Beans.
