Ingredients

  • 2 cups basmati rice unrinsed
  • 3 cups water
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil divided
  • 3 tablespoons cilantro finely chopped
  • 2 tablespoons lime juice fresh
  • 1 tablespoon lime zest

Garnish:

  • cilantro chopped

Instructions

  1. In a small heavy pot, add rice, water, 1 tablespoon oil and salt.
  2. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce heat to low and cover with a lid for about 15 minutes.
  3. Turn off heat and let the rice sit COVERED with the lid on for an additional 5-10 minutes. Do NOT uncover immediately, as the rice is still cooking.
  4. In a medium bowl, combine chopped cilantro, lime juice, lime zest, rice and remaining 1 tablespoon of oil and toss until completely mixed.
  5. Serve as is or topped with cilantro and Chipotle Black Beans.
