Chipotle Corn Salsa
Chipotle Corn Salsa combines sweet yellow corn with finely chopped jalapeños, red onion, fresh cilantro, and citrus juices for bright acidity, balanced with salt and optional black pepper. Letting the mixture rest in the fridge allows the flavors to meld, producing a flavorful, smoky salsa with a zip of heat and fresh herbaceous notes.
Ingredients
- 1 lb yellow corn drained - or fresh grilled corn, canned
- 2 jalapeños de-veined and de-seeded, and very finely chopped
- 1 red onion very finely diced, small
- 1/4 cup cilantro chopped, fresh
- 1 lime juiced
- 1 teaspoon lemon juice
- kosher salt to taste
- black pepper optionally - to taste, ground
Instructions
- Prepare all the ingredients and add them to a large mixing bowl.
- Stir, adjust for salt. Cover and let sit in the fridge for an hour for the flavors to meld together.
- Give the salsa another good stir and serve with chips.
