Chipotle Corn Salsa
Description
This salsa features whole yellow corn providing sweetness and texture as the base with jalapeños adding a smoked, spicy kick. Red onion contributes sharpness and crunch, while fresh cilantro brings herbal freshness. Lime and lemon juices brighten the mixture and enhance its overall flavor.
After mixing, the salsa is refrigerated for about an hour to combine and deepen the flavors. It is typically served chilled and pairs well with chips or as a topping for grilled meats or tacos. The seasoning can be adjusted with kosher salt and black pepper to taste.
Ingredients
- 1 lb yellow corn drained - or fresh grilled corn, canned
- 2 jalapeños de-veined and de-seeded, and very finely chopped
- 1 red onion very finely diced, small
- 1/4 cup cilantro chopped, fresh
- 1 lime juiced
- 1 teaspoon lemon juice
- kosher salt to taste
- black pepper optionally - to taste, ground
Instructions
- Prepare all the ingredients and add them to a large mixing bowl.
- Stir, adjust for salt. Cover and let sit in the fridge for an hour for the flavors to meld together.
- Give the salsa another good stir and serve with chips.
