Ingredients

  • 1 lb canned yellow corn drained - or fresh grilled corn
  • 2 jalapeƱos de-veined and de-seeded, and very finely chopped
  • 1 small red onion very finely diced
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced
  • 1 teaspoon lemon juice
  • kosher salt to taste
  • ground black pepper optionally - to taste

Instructions

    Cup of Yum
  1. Prepare all the ingredients and add them to a large mixing bowl.
  2. Stir, adjust for salt. Cover and let sit in the fridge for an hour for the flavors to meld together.
  3. Give the salsa another good stir and serve with chips.
