Chipotle Dressing
This Chipotle Dressing combines red wine vinegar, honey, and a smoky adobo sauce emulsified with olive oil for a tangy and slightly sweet vinaigrette. The inclusion of cumin and oregano adds earthy warmth, while garlic powder deepens the flavor. It offers a smooth, well-balanced dressing that enhances salads or dishes needing a smoky, subtly spicy kick.
Ingredients
- 1/2 cup red wine vinegar
- 1/3 cup honey
- 1 tablespoon adobo sauce (see note 1)
- 1 tablespoon water
- 1 teaspoon cumin ground
- 1 teaspoon garlic powder
- 1/2 teaspoon oregano see note 2, dried
- 1 1/2 cups olive oil or rice bran oil (see note 3)
- salt freshly ground
- black pepper freshly ground
Instructions
- In a food processor or blender, combine red wine vinegar, honey, adobo sauce, water, cumin, garlic powder, and oregano and pulse to combine.
- With the motor still running, drizzle in the oil until the salad dressing comes together and emulsifies. Season to taste with salt and pepper (I like 1 tablespoon salt and 1 1/2 teaspoon pepper).
Notes
- Store leftover dressing covered in the refrigerator for up to 4 days to maintain freshness.
- To make your own adobo sauce, whisk together tomato paste, cider vinegar, chipotle powder, cumin, and other spices for an authentic smoky flavor.
- You can substitute dried Mexican oregano with Italian oregano or fresh oregano for a similar herbaceous note.
- Rice bran oil can be used instead of olive oil to achieve a more neutral flavor profile, as in some original recipes.
- This recipe yields about 2 cups, enough for approximately 16 servings at 2 tablespoons each.
