Chipotle Dressing
Description
Chipotle Dressing blends red wine vinegar, honey, and adobo sauce with cumin, garlic powder, and oregano to create a flavorful base. Olive oil is slowly incorporated to emulsify the blend, resulting in a creamy vinaigrette. The seasoning with freshly ground salt and pepper balances acidity and sweetness, while cumin and oregano provide depth. This dressing works well on salads needing a smoky, mildly spicy flavor without overpowering other ingredients.
The dressing's texture is smooth and pourable, easy to drizzle or toss. Honey lends a gentle sweetness that complements the tang of vinegar and smoky spice from the adobo sauce. The recipe suggests substituting rice bran oil for olive oil if a more neutral oil is preferred, affecting the final flavor subtly.
Store any leftovers in the refrigerator for up to four days. Homemade adobo sauce can be prepared separately, combining tomato paste, cider vinegar, chipotle powder, and savory spices to mimic the unique smoky heat that characterizes this dressing.
Ingredients
- 1/2 cup red wine vinegar
- 1/3 cup honey
- 1 tablespoon adobo sauce (see note 1)
- 1 tablespoon water
- 1 teaspoon cumin ground
- 1 teaspoon garlic powder
- 1/2 teaspoon oregano see note 2, dried
- 1 1/2 cups olive oil or rice bran oil (see note 3)
- salt freshly ground
- black pepper freshly ground
Instructions
- In a food processor or blender, combine red wine vinegar, honey, adobo sauce, water, cumin, garlic powder, and oregano and pulse to combine.
- With the motor still running, drizzle in the oil until the salad dressing comes together and emulsifies. Season to taste with salt and pepper (I like 1 tablespoon salt and 1 1/2 teaspoon pepper).
Notes
- Store leftover dressing covered in the refrigerator for up to 4 days to maintain freshness.
- To make your own adobo sauce, whisk together tomato paste, cider vinegar, chipotle powder, cumin, and other spices for an authentic smoky flavor.
- You can substitute dried Mexican oregano with Italian oregano or fresh oregano for a similar herbaceous note.
- Rice bran oil can be used instead of olive oil to achieve a more neutral flavor profile, as in some original recipes.
- This recipe yields about 2 cups, enough for approximately 16 servings at 2 tablespoons each.
