Chipotle Lime Vinaigrette

Ingredients
- 1 chipotle pepper in the can, large, smoked
- ¼ cup apricot jam sugar-free
- ¼ cup olive oil light, or avocado oil
- lime zest and juice of 2
- 1 tablespoon apple cider vinegar
- 1 garlic minced, clove
- stevia to taste
- Pinch salt
Instructions
- Add all the ingredients into the bowl of a mini chopper or immersion blender and mix until well combined.
- Taste the dressing, then add the stevia to taste. I found several drops worked perfectly for me. Store in an airtight jar in the fridge for up to a week.
