Ingredients

  • 1 chipotle pepper in the can, large, smoked
  • ¼ cup apricot jam sugar-free
  • ¼ cup olive oil light, or avocado oil
  • lime zest and juice of 2
  • 1 tablespoon apple cider vinegar
  • 1 garlic minced, clove
  • stevia to taste
  • Pinch salt

Instructions

  1. Add all the ingredients into the bowl of a mini chopper or immersion blender and mix until well combined.
  2. Taste the dressing, then add the stevia to taste. I found several drops worked perfectly for me. Store in an airtight jar in the fridge for up to a week.
