Chocolate Avocado Tart (Vegan, GF)

Ingredients

For the Crust
  • 2 cups walnuts
  • 1 cup figs
  • 2 tablespoons coconut oil in liquid form
For the Filling
  • 2 ripe avocados
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup maple syrup may substitute for agave syrup
  • 2 tablespoons coconut oil in liquid form
  • 2 tablespoons coconut cream
  • Raspberries to garnish optional

Instructions

    Cup of Yum
  1. For the Crust
  2. Like a 7 or 8" tart pan* with plastic wrap
  3. Place the dates, coconut oil, and walnut in a food processor
  4. Process until all the ingredients are ground
  5. Place the mixture into the tart pan and press with your fingers until the crust coats the bottom and sides
  6. Freeze while making the filling
  7. For filling
  8. Place all the filling ingredients in the food processor and process for 30 seconds
  9. Spoon filling on top of the crust and smooth out the top
  10. Decorate with fresh raspberries (optional)
  11. Refrigerate for 3-4 hours to set
  12. Enjoy!

Notes

  • *I recommend using one with a removable bottom for easy lifting
