Chocolate Caramel Ritz Bites

Basically you sandwich a chocolate-caramel candy in between two ritz crackers and dip it either halfway or completely in melted chocolate. I use dark chocolate, but milk, semi-sweet, or even white chocolate works — whatever is your favorite!

Ingredients

  • 16 Ritz crackers
  • 8 chocolate caramel candies
  • ½ cup dark chocolate chips
  • 1 teaspoon vegetable oil
  • Sea salt, optional

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Place half of the 16 Ritz Crackers face down on a parchment-lined baking sheet.
  2. Top with 8 chocolate caramel candies and bake for 3-5 minutes or until the candy is soft.
  3. Gently press the remaining Ritz crackers on top and compress to get a sandwich cookie. Let them cool.
  4. Microwave the ½ cup dark chocolate chips in 15-second intervals stirring in between until melted. Stir in the 1 teaspoon vegetable oil to thin the chocolate. Add more as needed to get to the consistency desired.
  5. Dip half the cracker cookie in the chocolate and set them on the parchment-lined baking sheet to cool and harden.
  6. If desired add a small sprinkle of sea salt, and serve!
