Chocolate Chia Pudding
Chocolate Chia Pudding is made by blending coconut and cashew milk with cacao powder, maple syrup, vanilla, and salt, then mixing in chia seeds. After resting in the refrigerator, the chia seeds absorb the liquid to create a thick, creamy pudding that balances the richness of chocolate with the mild sweetness of maple syrup. This pudding is served chilled in individual jars, making it convenient for grab-and-go snacks or desserts.
Ingredients
- 14 oz coconut milk 1 can
- ½ cup cashew milk or other nut milk, or dairy milk
- ¼ teaspoon salt
- 3 teaspoon maple syrup
- 1 teaspoon vanilla extract
- 3 tablespoon cacao powder or cocoa powder
- ½ cup chia seeds
Instructions
- Combine coconut milk, cashew or other milk, salt, and maple syrup, vanilla extract and cacao powder in a blender or food processor
- Add the chia seeds and pulse to combine.
- Pour the pudding mixture into six 4 oz jars with lids
- Allow the jars to sit for 5 minutes, then give them each a shake to break up any clumps and make sure the seeds haven't sunk to the bottom. Store in the fridge for at least 4 hours, or overnight.
- Eat from the jar.
Notes
- Use a blender to thoroughly combine separated coconut cream for a smooth texture.
- Chill the pudding for at least 4 hours or overnight to allow chia seeds to absorb liquid fully.
- Serve directly from jars for convenience and portion control.
