  • 14 oz coconut milk 1 can
  • ½ cup cashew milk or other nut milk, or dairy milk
  • ¼ teaspoon salt
  • 3 teaspoon maple syrup
  • 1 teaspoon vanilla extract
  • 3 tablespoon cacao powder or cocoa powder
  • ½ cup chia seeds

Instructions

  1. Combine coconut milk, cashew or other milk, salt, and maple syrup, vanilla extract and cacao powder in a blender or food processor
  2. Add the chia seeds and pulse to combine. 
  3. Pour the pudding mixture into six 4 oz jars with lids
  4. Allow the jars to sit for 5 minutes, then give them each a shake to break up any clumps and make sure the seeds haven't sunk to the bottom. Store in the fridge for at least 4 hours, or overnight.
  5. Eat from the jar.

Notes

  • Use a blender to thoroughly combine separated coconut cream for a smooth texture.
  • Chill the pudding for at least 4 hours or overnight to allow chia seeds to absorb liquid fully.
  • Serve directly from jars for convenience and portion control.
