Ingredients

  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips mini, semi-sweet

Instructions

  1. Preheat oven to 400 degrees.
  2. Whisk together the vegetable oil, egg, milk and vanilla extract until well combined.
  3. Sift together flour, sugar, baking powder and salt.
  4. Whisk together the dry and wet ingredients until just combined, then stir in the chocolate chips.
  5. Line muffin tins with muffin liners and fill the cups 3/4 full.
  6. Bake for 20 to 22 minutes or until toothpick placed into muffins come out clean.
