Chocolate Chip Muffins
Chocolate Chip Muffins combine a tender crumb made from all-purpose flour, milk, oil, and butter with plenty of chocolate chips both mixed in and sprinkled on top. A dusting of coarse sugar gives a slight crunch on the golden muffin tops after baking at 400°F. The resulting muffins are moist with bursts of chocolate and a light sweet crust, good for breakfast or snacks.
Ingredients
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/3 cup vegetable oil
- 2 tablespoons butter melted
- 1 egg
- 3/4 teaspoon vanilla extract
- 1 1/4 cups chocolate chips divided use
- 2 tablespoons sugar optional, coarse
- cooking spray
Instructions
- Preheat the oven to 400 degrees F. Coat a muffin tin with cooking spray.
- Place the flour, sugar, baking powder, 1 cup of chocolate chips and salt in a bowl. Stir to combine.
- In a second bowl, whisk together the milk, oil, butter egg and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Divide the batter evenly between the cups in the muffin tin. Sprinkle the remaining 1/4 cup chocolate chips over the top of the muffins.
- Sprinkle the coarse sugar over the muffins.
- Bake the muffins for 15-18 minutes or until golden brown.
- Let cool for at least 5 minutes, then serve.
