Chocolate Chip Muffins

Chocolate Chip Muffins combine a tender crumb made from all-purpose flour, milk, oil, and butter with plenty of chocolate chips both mixed in and sprinkled on top. A dusting of coarse sugar gives a slight crunch on the golden muffin tops after baking at 400°F. The resulting muffins are moist with bursts of chocolate and a light sweet crust, good for breakfast or snacks.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 2 tablespoons butter melted
  • 1 egg
  • 3/4 teaspoon vanilla extract
  • 1 1/4 cups chocolate chips divided use
  • 2 tablespoons sugar optional, coarse
  • cooking spray

Instructions

  1. Preheat the oven to 400 degrees F. Coat a muffin tin with cooking spray.
  2. Place the flour, sugar, baking powder, 1 cup of chocolate chips and salt in a bowl. Stir to combine.
  3. In a second bowl, whisk together the milk, oil, butter egg and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly between the cups in the muffin tin. Sprinkle the remaining 1/4 cup chocolate chips over the top of the muffins.
  6. Sprinkle the coarse sugar over the muffins.
  7. Bake the muffins for 15-18 minutes or until golden brown.
  8. Let cool for at least 5 minutes, then serve.
