Chocolate Chip Puffed Rice Cookies

Chocolate chip cookies made from puffed rice instead of flour for volume and applesauce instead of butter to add moisture.

Ingredients

Dry Ingredients
  • 2 cups puffed rice cereal
  • 6 tbsp oat flour
  • 1 tsp baking soda
  • ¼ tsp salt
Wet Ingredients
  • 1 egg
  • ½ cup unsweetened applesauce
  • 1 tsp vanilla
  • 2 ½ tsp stevia
  • 2 tbsp mini chocolate chips

Instructions

  1. Preheat oven to 325°F. Mix dry ingredients and wet ingredients separately. Combine into one bowl with half the chocolate chips.
  2. Allow the “dough” to rest and hydrate for a few minutes before scooping.
  3. Grease a sheet pan. Using a cookie scoop place the dough onto the pan. Form into cookie shape, top with remaining chocolate chips. I yielded 11 cookies.
  4. Bake 10 minutes.
