Ingredients

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dark chocolate chunks
  • 1/2 cup dried cranberries (chopped)
  • 1/2 cup Chopped Pecans (chopped)
  • 1/4 cup sweetened shredded coconut

Instructions

  1. Preheat your oven to 350º Fahrenheit. Place a piece of parchment paper into the bottom and up the sides of an 8x8 inch pan. Spray with cooking spray.
  2. In a large bowl, beat the butter and sugars together until fluffy.
  3. Beat in egg and vanilla.
  4. Mix in flour, baking powder and salt until just mixed.
  5. Fold in chocolate chunks, cranberries, pecans, and coconut.
  6. Spread batter evenly in the baking pan and bake for 35-40 minutes (until golden brown and an inserted toothpick comes out clean.)
  7. Store in an airtight container.
