Chocolate Confetti Squares
Chocolate Confetti Squares are a no-bake treat made by melting chocolate chips, peanut butter, and butter together, then mixing in vanilla and salt before folding in mini marshmallows. The mixture is spread into a pan and topped with additional marshmallows for a festive, colorful appearance. Chilling in the refrigerator sets the squares firm enough to cut. This simple recipe combines rich chocolate and peanut butter with chewy marshmallows for a soft, sweet bar suitable for snacking or dessert.
Ingredients
- 2 cups chocolate chips
- 1 cup peanut butter
- 4 tablespoons butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon kosher salt
- 10 ounces mini marshmallows 1 bag, rainbow
Instructions
- Line an 8x8" baking pan with parchment paper and spray with vegetable oil spray.
- In a large microwave safe bowl, in 30 second increments, melt chocolate chips, peanut butter and butter together, stirring in between each time you microwave (this should take 90 seconds total).
- Add in the vanilla and salt then let cool for 5 minutes (to avoid melting the marshmallows).
- Add in 3/4 of the marshmallows to the semi-cooled chocolate mixture and coat well.
- Spread the mixture into the pan then immediately top with the remaining marshmallows and press them into the top.
- Put the pan in the refrigerator to chill for 30 minutes before serving.
