  • 2 cups chocolate chips
  • 1 cup peanut butter
  • 4 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 10 ounces mini marshmallows 1 bag, rainbow

Instructions

  1. Line an 8x8" baking pan with parchment paper and spray with vegetable oil spray.
  2. In a large microwave safe bowl, in 30 second increments, melt chocolate chips, peanut butter and butter together, stirring in between each time you microwave (this should take 90 seconds total).
  3. Add in the vanilla and salt then let cool for 5 minutes (to avoid melting the marshmallows).
  4. Add in 3/4 of the marshmallows to the semi-cooled chocolate mixture and coat well.
  5. Spread the mixture into the pan then immediately top with the remaining marshmallows and press them into the top.
  6. Put the pan in the refrigerator to chill for 30 minutes before serving.
