Chocolate Covered Peppermint Blondies

Ingredients

For Blondies
  • 1 cup all purpose flour
  • 1 cup packed brown sugar
  • 1 tick butter, softened (1/2 cup)
  • 1 large egg room temperature
  • 1/3 cup mini chocolate chips
  • 2 teaspoons pure vanilla extract
  • 1/8 teaspoon peppermint extract
  • 1/4 teaspoon salt
For Peppermint-Chocolate Layer
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup Assorted Peppermint Candies candy cane, peppermint M&Ms, etc

Instructions

  1. Heat oven to 350 F. Grease and line a 8 inch or 9-inch baking pan with parchment paper.
  2. Melt butter in a medium sized microwave safe bowl
  3. Stir in sugar
  4. Whisk in the egg, vanilla extract, peppermint extract and salt till smooth. Now add the flour and mix well. Fold in the chocolate chips.
  5. Pour into the lined pan. Use a spatula to blend the dough evenly
  6. bake for 20-22 minutes till done
  7. Sprinkle the mini chocolate chips into the hot blondies and using a spatula spread it out evenly once it starts melting
  8. Throw in the pepperminty stuff while the chocolate is still warm. Let it cool down completely before cutting into squares.
