Ingredients
- 20 large strawberries
- 24 ounces white chocolate or dark green candy melts
- liquid green candy food color skip if using dark green candy melts
- 20 ginger cookies you may use oatmeal cookies, OREO as well
- ¼ cup holiday sprinkles
- 20 Yellow star candy

Instructions
- Cut the stem end off strawberries to create a flat surface for the berry to stand on top of the cookies.
- Spear the flat side of each strawberry with a toothpick (if the toothpick slides off the berry, spear it on the tip end of the berry so it holds it).
- Chop the white chocolate into small pieces. Melt chocolate or candy melts in a microwave-safe bowl for 30 seconds intervals in the microwave, stirring in between until the chocolate is almost completely melted. Keep stirring, the residue heat of the bowl will melt the chocolate completely. Alternatively, you can use a double boiler.
- Reserve ⅓ cup of melted white chocolate. To the remaining melted chocolate add a few drops of green food color, and stir well until the color gets blended completely.
- Note: you MUST use special color to stir into melted chocolate. These are called candy colors, they are liquid gel-like colors. If regular food colors are used to melt chocolate can cause it to seize, turn very hard, and be unable to be used.
- Dip strawberry into melted chocolate, swirl it gently and shake off the excess chocolate coating. Immediately sprinkle with nonpareils sprinkles and top a star candy on top of the berry.
- Place the chocolate-covered berry on a tray lined with parchment paper. Repeat for all remaining strawberries.
- You can chill strawberries uncovered in the refrigerator until set.
- Frost gingersnaps or ginger cookies or oatmeal cookies or OREOs with white chocolate.
- Before the chocolate frosting sets, place a strawberry on top of the frosted cookie so the strawberry Christmas tree sticks to the base cookie.
- Once the Christmas tree is completely hardened serve. Enjoy!
