Instructions
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- In a large bowl mix dry ingredients, oats, almonds, shredded coconut, brown sugar, cinnamon, and salt.
- Coat dry ingredients with honey, oil, and vanilla extract. Mix until evenly coated.
- Spread the mixture evenly onto the prepared baking sheet. Bake for 20–25 minutes, stirring halfway through, until golden and crisp.
- Allow granola to cool completely before adding chocolate chunks and freeze-dried strawberries.
- Drizzle melted chocolate over granola, place baking sheet in refrigerator to allow the chocolate to harden faster.
- Once chocolate has set, break up granola and place in an airtight container.
Notes
- Store the granola at room temperature in a resealable bag or airtight container. It will last up to 2 weeks!
- Stick with freeze-dried strawberries in this recipe. Fresh strawberries have a lot of moisture, which will make the granola soggy and cause it to spoil much faster.
- Keep a close watch on the oven to ensure that the granola doesn’t overbrown or burn.
