This chocolate Strawberry Granola is easy to make and delicious! It’s full of crunchy textures and sweet flavors that work well with any breakfast or dessert.

Ingredients

  • 3 cups rolled oats
  • 1 ½ cups pecans chopped
  • 1 cup almond slices
  • ½ cup shredded coconut
  • cup brown sugar
  • cup avocado oil or coconut oil
  • cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • freeze-dried strawberries
  • dark chocolate chunks
  • ½ cup dark chocolate melted

Instructions

  1. Preheat oven to 325°F and line a baking sheet with parchment paper.
  2. In a large bowl mix dry ingredients, oats, almonds, shredded coconut, brown sugar, cinnamon, and salt.
  3. Coat dry ingredients with honey, oil, and vanilla extract. Mix until evenly coated.
  4. Spread the mixture evenly onto the prepared baking sheet. Bake for 20–25 minutes, stirring halfway through, until golden and crisp.
  5. Allow granola to cool completely before adding chocolate chunks and freeze-dried strawberries.
  6. Drizzle melted chocolate over granola, place baking sheet in refrigerator to allow the chocolate to harden faster.
  7. Once chocolate has set, break up granola and place in an airtight container.

Notes

  • Store the granola at room temperature in a resealable bag or airtight container. It will last up to 2 weeks!
  • Stick with freeze-dried strawberries in this recipe. Fresh strawberries have a lot of moisture, which will make the granola soggy and cause it to spoil much faster.
  • Keep a close watch on the oven to ensure that the granola doesn’t overbrown or burn.
