Ingredients
- 4 cups rolled oats
- ½ cup flaxseeds
- ⅓ cup coconut oil melted
- ⅓ cup honey
- 5 tablespoon cocoa powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 1 cup dark chocolate chopped
Instructions
- Preheat oven to 275°F. Line a baking sheet with parchment paper.
- In a large bowl, combine the coconut oil, honey, vanilla, cocoa powder, salt and cinnamon. Stir until a smooth paste forms.
- Fold in the oats and flaxseeds. Mix until all the chocolate paste is well distributed and coats all the oats.
- Transfer the mixture to the prepared baking sheet and spread into an even layer.
- Bake for 50 minutes, stirring once at about 30 minutes in to redistribute the oats.
- Remove from the oven and sprinkle the chopped chocolate over the top. Stir slightly (just a couple of swirls) to form some clusters.
- Allow to cool completely before storing in an airtight container at room temperature. Makes about 6 cups.

- Storage: Store the cut granola in an airtight container at room temperature. It will keep well for up to a month.
