Description

These Chocolate Hazelnut Balls combine raw or toasted hazelnuts processed into small pieces with cocoa powder, maple syrup, vanilla extract, and a hint of sea salt. The mixture is pureed until it sticks together to form cohesive bites, with water added sparingly if needed to achieve the right consistency. Adding dark chocolate chips is optional, amplifying the chocolate flavor and introducing a slight variation in texture.

Once shaped into balls, each can be centered with a whole hazelnut for a traditional Ferrero Rocher style surprise, followed by rolling in finely chopped hazelnuts for added crunch and an attractive finish.   • 1 cup hazelnuts raw or toasted, 12 individual
  • 2 Tablespoons cocoa powder or cacao
  • 2 Tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • teaspoon salt sea salt
  • 1 Tablespoon dark chocolate optional, dairy-free mini chocolate chips or chunks

Instructions

  1. Add 1 cup hazelnuts into a food processor fitted with the S-blade and process until hazelnuts are chopped into small pieces.
  2. Add cacao powder, maple syrup, vanilla, sea salt and chocolate (if using) into the processor and pulse a few more times, until the ingredients start to stick together. If the mixture seems too dry, add a little water, 1 teaspoon at a time until the mixture holds together well enough to be formed into balls. Be sure not to add too much water.
  3. Roll mixture into bite-size balls and insert one hazelnut into the center of each, forming the ball around it. This step is totally optional, but makes the bites more like the traditional Ferrero Rocher.
  4. Chop remaining 4 hazelnuts into tiny pieces. Roll each ball in the mixture to coat the outside.
