Chocolate Hazelnut Date Balls

Healthy Chocolate Hazelnut Date Balls, inspired by Ferrero Rocher are made with hazelnuts, dates, pumpkin puree, and cocoa powder.

Ingredients

  • 3/4 cup hazelnuts (3.5 oz total)
  • 9 pitted Medjool Dates
  • 1/4 cup canned or homemade pumpkin puree
  • Pinch sea salt
  • 1/4 cup unsweetened cocoa powder (I used Dutch process)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Place 1/3 cup of the hazelnuts in a food processor fitted with a metal blade.
  2. Process until nuts chopped. Transfer to a small bowl and set aside.
  3. Set 16 nuts aside. Then add the remaining hazelnuts to the food processor and process until finely ground.
  4. Add the dates, pumpkin purée, cocoa powder, salt and vanilla extract and continue to process until ingredients are combined and smooth.
  5. Using a spoon (or your hands), scoop and roll the mixture into 16 equal balls, placing 1 whole nut into each one.
  6. Then roll each ball in the remaining hazelnuts and serve immediately or store in the freezer or the fridge.
