Chocolate & Jam Tea Cake

A simple tea cake for using up last season's preserves.

Ingredients

  • 1 1/2 cup self-rising flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract or chocolate extract
  • 1 cup prepared jam
  • 3/4 cup whole milk

Instructions

  1. Preheat oven to 350°F. Grease a loaf pan and line with parchment paper.
  2. Sift together flour and cocoa, and set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla, jam and milk.
  5. Stir flour into wet mixture until just combined.
  6. Pour batter into prepared pan and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool 10-15 minutes before serving. Store in an airtight container.

Notes

  • If you don't have self-rising flour, simply swap in 1 1/2 cups all-purpose flour, 2 teaspoons baking powder, and 1/2 teaspoon salt.
