Chocolate Madeleines

Chocolate Madeleines are classic shell shaped French butter cakes made with cocoa powder for a soft buttery chocolate sponge and crispy edges.

Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/4 cup unsweetened cocoa powder
  • 4 tablespoons unsalted butter , melted and cooled for 3 minutes

Instructions

  1. Preheat oven to 375 degrees and spray a madeleine mold with baking spray.
  2. Add eggs and vanilla to your stand mixer with the whisk attachment.
  3. Beat for 5-7 minutes until the eggs are very light yellow and leave a ribbon then you lift the whisk attachment out of the stand mixer.
  4. Add in the salt and sugar and beat for 30 seconds.
  5. Sift in the flour and unsweetened cocoa powder on the lowest speed setting until just combined.
  6. Add in the melted butter and stir until just combined.
  7. Add batter to the molds until almost full.
  8. Bake for 13-15 minutes until the cookies spring back when touched.
