Chocolate Marshmallow Chex Squares

Chocolate Marshmallow Chex Squares mix crispy rice cereal with melted butter and marshmallows, folded with chocolate chunks and extra marshmallows, then pressed into a pan and dusted with powdered sugar. Ingredients

  • 2.5 cups rice chex cereal
  • ¼ cup butter unsalted
  • 4.5 cups marshmallows small
  • ⅛ tsp salt sea salt
  • ⅓ cup chocolate chunks
  • 1/4-1/2 cup marshmallows for topping, small
  • powdered sugar (for dusting)

Instructions

  1. Line a small square baking pan [one with a lip, a brownie pan will do!] with foil and rub with a little bit of butter or oil to prevent sticking or use some naturally non-stick parchment paper!
  2. In a medium pot, melt butter over medium-low heat.
  3. Add 4.5 cups marshmallows and whisk/stir until smooth and melted, about 5 minutes.
  4. Remove pot from heat.
  5. Using a moistened spoon, fold in the cereal.
  6. Add the chocolate, salt, and an extra 1/4-1/2 cup of marshmallows and fold it in as well, moving fast as the gooey melted marshmallow will set fast.
  7. Spoon onto your baking pan and press into an even layer, as thin or thick as you would like.
  8. Use a sifter or dusting wand to dust with powdered sugar [optional but prettty!] and allow to cool.
  9. Cut into squares to gift or scarf!

Notes

  • Line your baking pan with foil or parchment and grease to prevent sticking before adding the mixture.
  • Melt marshmallows over low heat to avoid burning and stir continuously for a smooth finish.
  • Add extra marshmallows and chocolate chunks quickly before setting, as the mixture cools and stiffens fast.
  • Use a moistened spoon or spatula to press the mixture evenly into the pan.
  • Dust with powdered sugar after cooling for a light sweetness and attractive appearance.
