Ingredients

  • 2 cups sugar
  • 1 3/4 cups flour
  • 1 cup cocoa powder unsweetened
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large egg
  • 1 cup milk whole
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1 cup coffee boiling water is ok too, hot
  • peanut butter frosting

Instructions

  1. Preheat the oven to 350 degrees and butter and dust with cocoa powder two 9 inch cake pans.
  2. In a stand mixer on low speed add together the sugar, flour, cocoa powder, baking powder, baking soda and salt.
  3. In a medium bowl combine the eggs, milk, oil and vanilla and add to the stand mixer on low until just combined (or it will make a dense cake) and finally add in the hot coffee carefully and stir it in with a spatula or large spoon until just combined (do not use the mixer, coffee is very hot).
  4. Pour batter into the pans and bake for 30-35 minutes then remove letting them cool completely before frosting with the peanut butter frosting.
