Chocolate Peanut Butter Cookies
These Chocolate Peanut Butter Cookies mix natural peanut butter, maple syrup, and cocoa powder for a rich, chewy cookie dough enriched with chocolate or peanut butter chips. Baked until edges set and fully cooled, the cookies develop a tender texture accented by pockets of melted chips. They store well at room temperature or frozen for convenience.
Ingredients
- 1 cup peanut butter I used Trader Joe’s, natural, drippy, creamy
- 1 egg
- ½ cup maple syrup
- ⅓ cup cocoa powder unsweetened
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- ½ cup chocolate chips I used Lily's, or peanut butter chips
Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper or a silicone mat.
- In a large bowl combine all the ingredients, except for the chocolate chips.
- Stir in chocolate chips or peanut butter chips.
- Scoop out the cookie batter using a small/medium cooking scoop or a Tablespoon. Place on the baking sheet giving about 1 ½ inches between each cookie. Press cookies down slightly. Top with additional chocolate or peanut butter chips.
- Bake cookies for 12-14 minutes until edges are set.
- Remove from oven and let cookies cool completely before touching or removing.
Notes
- Store cookies at room temperature for up to 4 days, or refrigerate for one week.
- For longer storage, freeze cookies for up to 3 months in a sealed container.
