Description

Ingredients

  • 1 cup peanut butter I used Trader Joe’s, natural, drippy, creamy
  • 1 egg
  • ½ cup maple syrup
  • cup cocoa powder unsweetened
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips I used Lily's, or peanut butter chips

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl combine all the ingredients, except for the chocolate chips.
  3. Stir in chocolate chips or peanut butter chips.
  4. Scoop out the cookie batter using a small/medium cooking scoop or a Tablespoon. Place on the baking sheet giving about 1 ½ inches between each cookie. Press cookies down slightly. Top with additional chocolate or peanut butter chips.
  5. Bake cookies for 12-14 minutes until edges are set.
  6. Remove from oven and let cookies cool completely before touching or removing.

Notes

  • Store cookies at room temperature for up to 4 days, or refrigerate for one week.
  • For longer storage, freeze cookies for up to 3 months in a sealed container.
