Chocolate Peanut Butter Cups

Chocolate Peanut Butter Cups are layered treats with rich cacao chocolate and creamy peanut butter filling. Using coconut oil to melt chocolate provides a smooth base that hardens after freezing. The peanut butter layer is sweetened lightly with honey and balanced with a pinch of salt for depth. Freezing ensures firm, clean layers and a firm texture that holds together well. Optional crushed nuts add an extra crunch topping.

Ingredients

Chocolate Layer
  • ¾ cup cacao powder
  • 1 cup coconut oil
  • 4 Tablespoon honey raw; organic
  • ½ teaspoon vanilla extract pure
Peanut Butter Filling
  • 1 cup peanut butter
  • 1 Tablespoon honey raw; organic
  • pinch salt

Instructions

    Cup of Yum
  1. Melt the coconut oil on medium heat and mix it with the cacao powder. Add the honey and vanilla extract and mix everything.
  2. Pour in the silicone cups, only about 1/3 up the side.
  3. Place the silicone cups on a baking sheet or in a muffin pan and freeze for about 15 minutes until they are firm.
  4. Mix peanut butter and honey and a pinch of salt if you are using raw unsalty peanut butter.
  5. Take the cups out of the freezer and pour about 1 Tbsp into the cups.
  6. Freeze again for about 15 minutes until the peanut butter is firm.
  7. After that add the last layer of the chocolate on top of the peanut butter and freeze again for about 2 - 3 hours to set.
  8. If you want you can add crushed walnuts or pistachios on top.
