Description

The recipe starts by melting coconut oil and combining it with cacao powder, honey, and vanilla extract to form a smooth chocolate layer. This is poured into silicone molds and chilled to solidify. A peanut butter mixture sweetened with honey and salted if unsalted peanut butter is used forms the creamy center, which is layered atop the set chocolate and frozen again to firm up. A final chocolate layer completes the cups, which are then frozen for several hours to set fully.

The use of coconut oil allows the chocolate shell to solidify quickly and hold the peanut butter filling securely, providing a pleasing texture contrast between smooth chocolate and creamy peanut butter. Freezing rather than baking or refrigerating ensures the best firmness and layering separation.

Adding crushed walnuts or pistachios on top before final freezing adds textural contrast and nutty flavor notes. These can be stored in the freezer until needed, making them convenient snacks or treats.

Chocolate Layer

  • ¾ cup cacao powder
  • 1 cup coconut oil
  • 4 Tablespoon honey raw; organic
  • ½ teaspoon vanilla extract pure

Peanut Butter Filling

  • 1 cup peanut butter
  • 1 Tablespoon honey raw; organic
  • pinch salt

Instructions

  1. Melt the coconut oil on medium heat and mix it with the cacao powder. Add the honey and vanilla extract and mix everything.
  2. Pour in the silicone cups, only about 1/3 up the side.
  3. Place the silicone cups on a baking sheet or in a muffin pan and freeze for about 15 minutes until they are firm.
  4. Mix peanut butter and honey and a pinch of salt if you are using raw unsalty peanut butter.
  5. Take the cups out of the freezer and pour about 1 Tbsp into the cups.
  6. Freeze again for about 15 minutes until the peanut butter is firm.
  7. After that add the last layer of the chocolate on top of the peanut butter and freeze again for about 2 - 3 hours to set.
  8. If you want you can add crushed walnuts or pistachios on top.
