Ingredients

  • mini whole wheat pancakes
  • 2 tablespoon semi-sweet chocolate chips
  • 1/4 cup sunflower butter

Instructions

  1. Make pancakes according to recipe directions, place on a cooling rack, and allow to cool fully.
  2. Melt chocolate chips in a microwave for 40 seconds or over a double boiler until melted and allow to cool.
  3. Stir sunflower butter into melted chocolate.
  4. Spread chocolate sunbutter on a pancake, and sandwich together with another pancake.

Notes

  • You can use dairy-free chocolate chips for a vegan-friendly version.
  • Add a touch of honey or maple syrup to the Chocolate Sunbutter for a hint of extra sweetness.
  • Add sliced bananas or strawberries to make this extra decadent.
  • Make a batch of mini pancakes and store them in the freezer so you can have them ready to go!
  • You can also use chocolate sunflower butter spread on regular sandwich bread, rolled up in lavash and cut into wheels or even for Nut-Free Nutella Matzo Crackers.
