Chocolate Swirl Zucchini Bread

A delicious zucchini bread swirled with delicious chocolate!

Ingredients

  • 1 ¼ cups granulated sugar
  • ¼ cup unsweetened applesauce
  • ½ cup nonfat vanilla Greek yogurt
  • 3 eggs
  • 2 teaspoons vanilla
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 2 cups shredded zucchini, about 2 medium zucchinis
  • 1 cup semi-sweet chocolate chips

  1. Preheat oven to 350 degrees Fahrenheit and spray a 9x5-inch loaf pan with cooking spray. If you have 8x4” loaf pans, use two.
  2. In a large bowl whisk the sugar, applesauce, Greek yogurt, eggs, and vanilla.
  3. In a separate bowl whisk the flour, baking soda, baking powder, salt, cinnamon, and cloves.
  4. Mix the applesauce mixture and the flour mixture until smooth. Fold in zucchini.
  5. Place chocolate chips in a medium bowl and melt in the microwave in 30-second intervals. Stir until the chocolate chips are smooth and melted.
  6. Take one cup of your zucchini bread batter, add it to the melted chocolate, and stir to combine.
  7. Pour the regular zucchini batter into the bottom of your loaf pan. Place the chocolate batter on the top. Swirl carefully using a butter knife. You want to swirl the batters, not mix them.
  8. Bake the loaf for about 45-50 minutes. A toothpick inserted should come out clean. Cool completely in the pan before removing.
  9. To remove from the pan, run a knife around the edges, invert the pan, and tap the bottom. The loaf should pop out.
