Chocolate Truffles
Chocolate Truffles are rich, smooth balls made from a ganache of heavy cream and semisweet chocolate disks. Once chilled, the ganache is scooped and rolled in cocoa powder or powdered sugar to create bite-sized confections with a creamy interior and a soft coating. They offer an intense chocolate flavor and melt easily on the tongue.
Ingredients
- 2 cups heavy cream
- 21 ounces semisweet chocolate not chocolate chips, disks or bar form
- 2 cups cocoa powder or powdered sugar
Instructions
- Add the heavy cream and chocolate disks to a large microwave safe bowl and microwave for 3 minutes then let sit for 3-4 minutes before whisking for 3-4 minutes until the mixture is smooth and shiny.
- Place saran wrap over the mixture and refrigerate for at least 4 hours.
- Using a tablespoon scoop make 1 tablespoon sized balls that you drop into either cocoa powder or powdered sugar and rolls into smooth balls.
Notes
- Use high-quality semisweet chocolate disks for smooth ganache texture.
- Chill the ganache until firm enough to scoop easily, at least 4 hours.
- Roll truffles gently in cocoa powder or powdered sugar to coat evenly without melting.
