  • 21 ounces semisweet chocolate not chocolate chips, disks or bar form
  • 2 cups cocoa powder or powdered sugar

Instructions

  1. Add the heavy cream and chocolate disks to a large microwave safe bowl and microwave for 3 minutes then let sit for 3-4 minutes before whisking for 3-4 minutes until the mixture is smooth and shiny.
  2. Place saran wrap over the mixture and refrigerate for at least 4 hours.
  3. Using a tablespoon scoop make 1 tablespoon sized balls that you drop into either cocoa powder or powdered sugar and rolls into smooth balls.

Notes

  • Use high-quality semisweet chocolate disks for smooth ganache texture.
  • Chill the ganache until firm enough to scoop easily, at least 4 hours.
  • Roll truffles gently in cocoa powder or powdered sugar to coat evenly without melting.
