Ingredients

Chocolate Ganache
  • 300 gms – 10 oz. dark chocolate chopped
  • 300 ml – 1 ¼ cup heavy cream
  • 60 gms – ¼ cup butter
Genoise Cake
  • 4 egg yolks
  • 4 egg whites
  • 120 gms – 1 cup icing sugar
  • 80 gms – 2/3 cup flour
  • 40 gms – 1 ½ oz. almond meal
  • Fondant decorations
