Chopped Cucumber Melon Summer Salad
We love this cucumber melon salad! Loaded with cantaloupe, cucumbers, pickled onions, feta cheese and pistachios, the entire thing is drizzled with a basil mint vinaigrette. It's a big bite of summer and perfect for any meal!

Ingredients
- 2 cups chopped cantaloupe,
- 2 cups chopped cucumber, peeled if you wish
- ⅓ cup crumbled Feta cheese
- ⅓ cup chopped roasted, salted pistachios
- ¼ cup pickled onions
- ¼ cup chopped fresh basil
- 2 tablespoons chopped fresh mint
- kosher salt and pepper
basil mint vinaigrette
- ¾ cup tightly packed fresh basil leaves
- ¼ cup tightly packed fresh mint leaves
- 1 garlic clove, minced
- 1 tablespoon lemon juice
- ½ tablespoon apple cider vinegar
- big pinch of kosher salt and pepper
- ⅓ to ½ cup olive oil
Instructions
- Combine the cantaloupe and cucumber in a large bowl. Top with the feta, pistachios, pickled onions and herbs. Add a pinch of salt and pepper. Toss well, until everything is combined.
- Drizzle on a few tablespoons of the vinaigrette. Toss a few more times. Taste and adjust seasoning as desired - more salt if needed, as much dressing as you wish.
- Serve immediately with extra dressing.

- Add all the ingredients to a blender or food processor and blend until smooth. Store any extras in a sealed container in the fridge for 2 to 3 days.
