Ingredients

Salad
  • 1 English cucumber
  • 1 red onion
  • 10 ounces grape tomatoes
  • ¼ cup kalamata olives
  • ¼ cup feta cheese
Dressing
  • 3 Tablespoons olive oil
  • 3 Tablespoons lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Chop the cucumbers, slice the red onion, halve the grape tomatoes and slice the olives.
  2. To make the dressing, in a serving bowl, whisk together the olive oil, lemon juice, salt and pepper.
  3. Add the chopped ingredients to the bowl with the dressing and toss.
  4. Sprinkle the feta cheese over the salad and serve.
