Chopped Veggie Slaw with Jalapeño Lime Vinaigrette

Chopped cabbage, peppers, carrots and scallions are tossed with a sweet and spicy jalapeño vinaigrette. This fresh and easy slaw recipe is ideal for entertaining, potlucks, cookouts and more.

Ingredients

  • 2 cups chopped green cabbage
  • 2 cups chopped red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper (seeded and chopped)
  • 1 cup diced scallions
  • 1 cup cilantro (minced)
Jalapeno Lime Vinaigrette
  • 1 lime (zested and juiced)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons minced jalapeño (optional)
  • 1 clove garlic (minced)
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • salt and pepper (to taste)

Instructions

  1. Place all the slaw ingredients in a large bowl; set aside.
  2. In a medium bowl, whisk together the vinaigrette ingredients. Check for seasoning and adjust accordingly. Drizzle vinaigrette over the slaw and toss well. Season with additional salt and pepper to taste.
